(Impromptu) Oatmeal Bars


When torn between Bars and Cookies, I am most likely to go with Bars. 
I had about a Kilo of Dark Sweet Chocolate at my disposal, with a few other ingredients I came up with this...


to make this you will need the ff:

3 eggs
1/3 cup packed brown sugar
50ml oil
500grams Dark Sweet Chocolate
80ml milk
1 teaspoon espresso (or you could use a mix of equal parts instant coffee and hot water)
1/2 teaspoon of salt
150grams cake flour
200 grams Instant Oatmeal

Nuts and Dried Fruit Optional

but for this recipe, I used:
50grams dry roasted peanuts
60grams dried cranberries




Pre-heat oven to 350
In a container, mix all dry ingredients: Flour, Oatmeal, and Salt, then set aside.
In a stainless steel bowl over a pot of simmering water, melt chocolate with half of the milk. Once the chocolate has melted wonderfully with the milk, add in the espresso, set aside to cool.
Get a bowl and mix well the eggs and the sugar, add in the oil and the rest of the milk then mix again.
Slowly pour in the melted chocolate mixture blend with the first mixture then slowly incorporate the dry ingredients. Careful enough not to overmix, toss in the nuts and fruit.

Line 9"x12" pan with butter and flour or parchment paper, whatever it is you have on hand. Pour the batter while tapping it onto the table to release trapped air bubbles and to distribute the mixture evenly.

bake for 15-20 minutes until a toothpick inserted comes out clean.

Dust with confectioner's sugar to make it look fanceeeeh, Cut equal square bars, or cut in half, hide the first half for personal consumption, and divide the rest for loved ones.
